Ingredients
1⁄4 c unsalted butter (melted)
1⁄2 onion (medium, chopped)
1⁄4 c flour
2 c half-and-half
2 c chicken broth
1⁄2 lb broccoli (chopped into bite size pieces, about 3 cups)
1 c carrot (julienned)
1⁄4 t ground nutmeg (optional)
8 oz sharp cheddar (grated)
kosher salt, freshly ground pepper
Instructions
- Melt the 1/4 cup butter and sautee the onions in it until soft. Sprinkle the flour over the mixture. Cook and stir over medium heat for 1-2 minutes.
- Whisk in the half & half and chicken stock.
- Add the broccoli and carrots. Cook over low heat for 20-25 minutes or until the broccoli and carrots are tender.
- Add salt and pepper to taste.
- If desired, blend one cup of soup and stir back in for a smoother soup.
- Reduce heat to low and slowly add in cheese, stirring until melted and incorporated.
- Stir in nutmeg if using.
- Serve with crusty bread, or check your store bakery for bread bowls.
