Broccoli and cheddar soup

Ingredients
1⁄4 c unsalted butter (melted)
1⁄2 onion (medium, chopped)
1⁄4 c flour
2 c half-and-half
2 c chicken broth
1⁄2 lb broccoli (chopped into bite size pieces, about 3 cups)
1 c carrot (julienned)
1⁄4 t ground nutmeg (optional)
8 oz sharp cheddar (grated)
  kosher salt, freshly ground pepper
Instructions
  1. Melt the 1/4 cup butter and sautee the onions in it until soft. Sprinkle the flour over the mixture. Cook and stir over medium heat for 1-2 minutes.
  2. Whisk in the half & half and chicken stock.
  3. Add the broccoli and carrots. Cook over low heat for 20-25 minutes or until the broccoli and carrots are tender.
  4. Add salt and pepper to taste.
  5. If desired, blend one cup of soup and stir back in for a smoother soup.
  6. Reduce heat to low and slowly add in cheese, stirring until melted and incorporated. 
  7. Stir in nutmeg if using.
  8. Serve with crusty bread, or check your store bakery for bread bowls.
