black bean and corn rice bowl

Ingredients
1 T extra-virgin olive oil
1 onion (diced)
1 green pepper (diced)
1⁄2 c corn kernals
1 cn black beans (drained and rinsed)
1 chipotle pepper in adobo sauce (diced)
2 T adobo sauce
1 c brown rice (uncooked)
Instructions
  1. Cook brown rice as directed on package.
  2. Meanwhile, in a medium skillet heat olive oil over medium heat. Add diced onion and cook until fragrant, 3-4 minutes. Stir in diced pepper and continue to cook for 2-3 more minutes. Stir in corn, black beans, chipotle pepper, and adobo sauce. Continue to cook until corn and black beans are ram, another 2-3 minutes.
  3. Place rice in bowls and add black bean mixture. Top with your favorite toppings.

*The chipotle adds a lot of heat, adjust to taste.
